Bacon! the glue of the culinary world. You can wrap almost anything in it and this recipe is no exception.
Perfect for weekend entertaining or even better, a fantastic way to impress your friends for the upcoming football season, and would be washed down perfectly with a nice cold beer.

Bacon Wrapped Crab Stuffed Shrimp
Ingredients: Shrimp 16/20 – peeled and devein 1lb bacon 1lb lump crab meat 1 slightly beaten egg 1 tsp. Worcestershire sauce 1 pinch of cayenne pepper ½ cup bread crumbs ¼ cup Mayonnaise ¼ tsp. garlic powder Juice of ½ lemon
Directions: Par cook bacon at 325 degrees for 6 minutes. Blend all ingredients, except shrimp and bacon. Stuff shrimp with crab mixture, and wrap with par cooked bacon; secure with tooth pick. Bake at 325 degrees for 15 minutes.
Pancetta Cream Sauce
Ingredients: Pancetta diced small 1 cup Chopped garlic 2 Tablespoons Chopped shallots 2 Tablespoons Borsion Cheese 24 ounces White wine 1 cup Heavy cream 1 gallon Chopped chives ½ cup Salt and pepper to taste
Directions: Add small amount of oil to the pan, once hot, add Pancetta and reduce heat. Cook for three to five minutes. Add garlic and shallots, cook about a minute and reduce with wine. Add cream and cheese, reduce half way. Add salt, pepper and chives.
I haven’t been paying attention to the news much lately and as you know I’ve been out of town for a few days, and today we went to Moody Gardens so I haven’t had time to post about any of that, but- someone, can’t remember who, told me something about Piglet and Winnie the Pooh being named dastardly characters and being banned in Iran or Iraq or somewhere. WELL-
One of my favorite authors is Larry McMurtry, particularly his novel, Lonesome Dove, and in that novel, one of the main characters, Gus, has a couple of pigs that are his pets. Also in one of his novels, The Evening Star, which is a sequel to Terms of Endearment, that main character, Aurora, has a grandson in prison in Huntsville, and every time she goes to see him she gets really upset and nothing can make her feel better until she stops at The Pig Stand down on Washington St. in Houston and eats a couple of Pig Sandwiches. I have always wanted to go to The Pig Stand just because of that part of the book, but I’ve never gotten around to it, and I’m not even sure if The Pig Stand in Houston is still in operation, though it’s still listed on the front of the menus.
On our way to San Antonio though, we stopped to eat outside of Seguin and to my surprise we found a Pig Stand. I didn’t eat a Pig Sandwich though, I ate a breakfast taco with sausage, cheese, and eggs, so it still had pig in it… While we were there I took a couple of pictures- This one is self-explanatory-

Preheat oven to 200C/180C fan-forced. Line a large baking tray with baking paper.Combine breadcrumbs, garlic, parsley, anchovies, parmesan and melted butter in a bowl. Season with salt and pepper.Using a small, sharp knife, cut a slit in the side of each fillet to form a pocket. Divide breadcrumb mixture between pockets and press to secure. Wrap 1 bacon rasher around each chicken breast and secure with a toothpick. Heat oil in a frying pan over medium-high heat. Cook chicken, in batches, for 2 minutes each side or until golden. Transfer to prepared baking tray. Bake for 20 minutes or until cooked through. Stand 5 minutes.Slice chicken. Divide lettuce between plates. Top with sliced chicken and sprinkle with parmesan. Serve with dressing.
So the other night I was lying in bed, something woke me up, I looked up and could have sworn I saw something standing in my hallway. I woke my husband who said, nothing there hun, and continued to snore for the next 5 hours … anyhoo! What does one do when they think they see something creeping in their hallway? go on google and look up paranormal experiences .. like any other normal crazy person out there.

Clarissa Glenn
18-year-old Clarissa Glenn claimed to experience odd, ghostly presences in her apartment in Cornwall, England. She had been told that the person who lived in her room before her had hanged himself. Glenn had a history of sleepwalking, and ever since moving into this flat, had dreamt of hanging herself. One night, presumably in her sleep, she hanged herself from the rafters by her scarf.
Brian Bethel
Brian Bethel was parked outside a movie theatre when two young kids approached him. Bethel says he had never been so afraid in his life as he was at this time. The kids asked him for a ride home, and when Bethel started the car before giving them an answer, he claims their eyes turned black and they said they couldn’t get into the car unless they were invited. He drove away and later wrote about his experience on his blog, leading to people from all over the world to shave similar encounters.
Greg Garrett
Greg Garrett was playing in his backyard in Enfield, Illinois in 1973 when he claims to have been attacked. His attacker was not a person, and the description matched no animal anyone had ever heard of. Anyone who has described the creature, which came to be known as the “Enfield Horror” gave the same description; three legs, five feet tall, gleaming red eyes and taloned arms that seem curl in the front of a torso similar to that of a t-rex.
Teresita Basa
Teresita Basa was stabbed to death and had her body set on fire in 1976. There was very little that linked the murder to any person, and police were left wondering. About a year later another woman who worked with Basa, Remy Chua, claimed to have seen Basa’s spirit appear in a lounge at the hospital where they worked. One night, Chua spoke to her family in Basa’s voice naming Allen Showery as the murderer. Police found Basa’s belongings in Showery’s home, and he confessed to the crime.
Doris Bither
Doris Bither was a drunk who was known for abusing her children, having come from an abusive home herself. She claimed much of this happened because of the “entities” that haunted her. She eventually got a few paranormal investigators to observe her, and after some time, she began to curse at people no one else saw. Allegedly, auras began forming near her and a green mist started to form around her. One of the investigators fainted on the scene.
